Sofrito is the based of dishes in Italy. If you add it to soup and risotto or pasta sauce, the dishes will be more delicious. You can make a lot of it, and stock it for a freezer. You can use the basic sofrito depending on dishes by considering how long to sauté. The amount of sofrito for two servings is 200g.
