Dorayaki is one of the most popular sweets in Japan. You can use anko (red bean paste) in a marketplace or, you can make it by yourself. I also have the recipe how to make anko on another page, so check it out. In this recipe, 4 pieces of dorayaki can be made. Enjoy to taste Japanese sweets!
Mix the egg in a bowl, add sugar, whisk until fluffy, and add honey and mirin.
Sift the cake flour and baking soda together, add to mixture and mix them without kneading.
Add 1 tbs of water, and then mix them.
Let the dough rest for 15 minutes.
If the dough is hard, add 10g of water to the mixture, and mix them (Make the dough so firm that the streaks disappear when you scoop it off).
Heat up a frying pan, apply salad oil. Wipe off the excess the oil, then pour the dough into a circle and bake.
If a hole appears on the surface, turn it over.
Bake it lightly (The back side only needs to be lightly baked).
Take it on a plate and wrap it with plastic wraps to prevent from drying. (This is the point that you keep the dough moisturize).
Put the red bean paste in the cake.
Sandwich it with another cake.
Wrap it in a plastic wrap and let it blend in.
