Tofu Hamburg Steak with Umeboshi Sauce

Tofu hamburg steak is my favorite dish. By changing part of the minced meat to tofu, it's very healthy. I show you how to make umeboshi sauce in this recipe. It's important to drain water from tofu well before making patties.

 300 g firm tofu (drained for 3 hours in a fridge by putting a 2kg weight on it)
 100 g ground pork
Ingredients (for the patty)
 1 egg
 10 cm of Japanese leek (thinly chopped)
 10 g grated ginger
 2 tbsp potato starch
 ½ tsp salt
 pepper
 1 tbsp salad oil
Sauce
 2 umeboshi (Japanese salt plums)
 2 tbsp sake
 1 tbsp mirin
 ½ tsp soy sauce
 salt
Topping
 2 green onions (thinly sliced)

Remove the seeds of umeboshi. Tap the umeboshi with a kitchen knife to make a paste.

Add sake, mirin, soy sauce and salt, mix them well.

In a bowl, put the ground pork, and ingredients (for the patty), and mix them well.

Add the tofu, and mix them until smooth.

Divide the mixture into 4 pieces, and make them oval shapes.

Pour the oil to a pan, and heat it up over medium heat. Fry them for 4-5 minutes.

Turn the patties over, and fry for 4-5 minutes again.

Wipe off the excess oil in a pan, and bring the sauce to simmer. When it brings to a boil, turn off the heat.

Serve the rissoles on a plate, and drizzle the umeboshi sauce. Top with green onions.
