Meat and Potato Stew (Nikujaga)

Nikujaga is a healthy traditional Japanese home cooking. We stew pork or beef meat, potatoes, onion and carrots in the mixture of soy sauce, sugar and so on. This recipe is so easy because you don't need katsuo dashi. You can make it delicious with only umami flavor of vegetables and meat.

 200 g sliced pork belly
 150 g onion
 100 g carrot
 250 g potato
 150 g shirataki
 10 g ginger
 2 ⅓ tbsp soy sauce
 2 ⅓ tbsp mirin
 1 tbsp sake
 2 tsp sugar
 4 frozen green beans

To remove odors and make it easier to soak in the taste, boil the shirataki for 2 minutes. Drain the water with a strainer.

Cut the shirataki vertically and horizontally from the center with kitchen shears.

cut the ginger into thin strips. Thinly Slice the onion.

Cut the potato into bite-sizes.

Cut the carrot into small bite-sizes more than potatoes (It helps the taste is easy to stain). Cut the green beans in half.

Cut the pork belly into 4 cm slices.

Heat it up over medium heat with a salad oil, and stir-fry the ginger and the pork belly.

When the pork has been cooked, add the carrot, potato, onion and shirataki.

It's OK once all of the ingredients was coated with oil.

Add the seasoning, and mix them well. Cover, simmer them over medium heat.

When the steam comes out from the pot, reduce the heat, and simmer them for 8 minutes.

After sticking a bamboo skewer and confirm that it passes through the potatoes.

After simmering, mix, let it sit with the lid for more than 30 minutes. Add the green beans, reheat it, and serve on a plate.
