Croque Monsieur Recipe Using Soy Milk Bechamel sauce

Croque monsieur is originally from France, but in Japan it's popular as breakfast or lunch. We can get it at a coffee shop, and a Western restaurants. In this recipe, I make it more healthy, I substitute wheat flour with rice flour to make a bechamel sauce. Also, I use soy milk instead of milk.

 4 white bread
 4 sliced cheddar cheese
 4 hamIf you like ham, you can use 6 or 8 hams for 2 serving. I like ham, so I use 4 hams per person.
 30 g shredded cheese
White sauce
 20 g butter
 12 g rice flour
 150 g soy milk
 2 pinches sea salt

Bake the white bread in a frying pan until the surfaces are slightly burned.

Put the butter to a frying pan. Heat it up, and melt it. Add the rice flour, and mix them until combined.

Add the soy milk at a time, bring it to a boil while mixing.

Reduce the heat to low, and season it with sea salt.

Mix it well, and check the taste.

Remove it to a bowl. Separating the sauce in half in advance is easy to spread it.

Spread the white sauce on the toasted bread thinly.

Put the two sliced cheese and two hams on it.

Spread the white sauce on it thickly. Coating the white sauce thickly in the middle is well-balanced for a presentation and taste.

Cover it with the toasted bread, and spread the white sauce on it thinly again.

Put half of the shredded cheese evenly on top at the end.

Bake the surface that is on the cheese in a frying pan until slightly burned. Don't burn it too much because the texture will be tough, and the appearance will be bad.

Cut it in half, and dish up on a plate. You can add the egg on top to taste. In this case, it is called croque-madame.
